This happened to me. A clean install of Windows 11 fixed the constant freezing and high disk usage for me.

I had the same problem. For me, turning off Windows Search and Superfetch in Services made a huge difference.

This. You could also try a clean install instead of an upgrade, as that often resolves leftover driver conflicts.

Yeah, and that high disk usage you mentioned—have you checked if Windows Search or Superfetch is running wild in the background?

I had the same problem. For me, turning off some of the new visual effects and animations in the accessibility settings helped a lot. Let me know if that works.

You could also try running the Windows Update troubleshooter, since sometimes leftover update files cause that high disk usage. Good luck!
